Wash brussel sprouts, then cut off the stem and then length wise in half.
Mix olive oil, salt and pepper in a bowl to fully coat the Brussel sprouts.
Add to a baking sheet and place in the oven at 425F for 15-20 minutes.
As the Brussel sprouts bake, use the same bowl to mix the maple syrup and balsamic vinegar.
When fully cooked and crispy, immediately coat the Brussel sprouts in the maple glaze mixture. Let them sit and absorb for about 2 minutes before serving.
