Add olive oil to pot and warm up. Add in onion and garlic. keep on low until soft.
Add in ground turkey and cook on medium until brown.
Add in kidney beans, green chilis, and spices (salt, pepper, chili powder). Set on low and add lid to pot for about 8-10 minutes.
Slowly add in tomato puree and spinach. Keep on low and stir until spinach is fully cooked into the chili. Add the mozzarella and let melt altogether.
Top with some extra cheese if preferred.
