Add olive oil to a pan and put on low heat to start.
Mix eggs in a small bowl.
Add bread crumbs to a plate.
Prep chicken, cut and wash into small strips.
Place strip into the egg (one piece at a time) then into the bread crumbs until completely covered.
Once you have several pieces of chicken ready to cook, slowly add to the pan and flip occasionally to cook evenly.
Once chicken is crisp put onto a plate with a paper towel to absorb the access oil. You can keep adding chicken into the pan and repeat the process until all pieces are cooked.
As chicken is cooling down add sea salt and freshly squeezed lemon.
