These Turkey meatballs are so delicious and really enhance meal prepping throughout the week!
I’m a big meatball fan (it’s in my Italian blood) but I wanted to try and change up the ingredients and come up with a healthier option.
Turkey is not my go-to protein but I do try to fit it in a few times throughout the year, especially during Fall where it fits the holiday season. I also don’t want to spend hours in the kitchen so I try to keep this recipe as easy as possible.
I like these best added to a salad so meal prepping is great in advance for this recipe. Then you can easily make lunches throughout the week or come home to a simple dinner of just throwing everything together.
What you’ll need:
- Ground Turkey
- Egg
- Bread crumbs
- Italian seasoning
- Parmesan cheese
- Salt and pepper
In a bowl, add your ground Turkey and egg and mix together well. Then, add all your dry ingredients and form/roll at least an inch apart on a non-stick baking sheet. Bake for 20 minutes at 350.
Flip the meatballs half way through to cook evenly, it’s ok if some cheese is melting out!
Feel free to add these to a soup as well. I have a really good soup recipe for left over Thanksgiving Turkey Here>> http://balancedhomebody.com/easy-turkey-soup/
