This Healthy Chili recipe is perfect for those chilly months where you still want to feel good about what you’re eating.
I love a good chili recipe especially in the Fall/Winter. Sometimes I find chilis to be a bit heavy or can make me feel gross immediately after eating so I wanted to make something lighter but still full chili vibes.
What you’ll need for this healthy chili recipe:
- Olive Oil
- Onion
- Garlic
- Green chilis
- Chili Powder
- Red Pepper flakes
- Ground Turkey
- Kidney beans
- Tomato Pasta
- Spinach
- Mozzarella Cheese
First, add a tbsp of olive oil to a pot and warm it up before adding in the chopped onion and garlic. Sauté that until it’s soft and golden. Add in your ground turkey and cook until fully brown.
Once the Turkey is fully cooked, add in your green chilis, kidney beans (or any beans you prefer), chili powder, and red pepper flakes. Make sure the heat is on low and add a lid to the pot so all the flavors can absorb together and all the ingredients soften up.
After about 8-10 minutes, slowly pour in the tomato pasta and cook on low for another 5 minutes. Lastly, add the spinach and Mozzarella and let it melt into the chili.
Serve up with some extra cheese on top!
This recipe is very simple and tastes delicious. Feel free to add some cornbread on the side to complete the meal.
Healthy Chili
Ingredients
- 1 tbsp olive oil
- 1/2 cup onion
- 3 garlic gloves minced
- 1.5 lbs ground turkey
- 1/2 cup kidney beans (or beans of your choice)
- 2 tbsps green chilis
- 1 tsp chili powder
- 12 oz tomato puree
- 1 cup spinach
- 1 cup mozzarella cheese
Instructions
- Add olive oil to pot and warm up. Add in onion and garlic. keep on low until soft.
- Add in ground turkey and cook on medium until brown.
- Add in kidney beans, green chilis, and spices (salt, pepper, chili powder). Set on low and add lid to pot for about 8-10 minutes.
- Slowly add in tomato puree and spinach. Keep on low and stir until spinach is fully cooked into the chili. Add the mozzarella and let melt altogether.
- Top with some extra cheese if preferred.
