Looking for a quick and easy Turkey Soup recipe? This is a must try meal for any soup lover. Especially tasty utilizing those Thanksgiving left overs. Perfect to help warm you up in those colder months.

Easy Turkey Soup

This easy turkey soup recipe includes turkey breast, onion, garlic, carrots, celery, white beans, rice, stock and spices. Feel free to use left over Turkey from Thanksgiving dinner. You can also use chicken instead of Turkey if you prefer.

Perfect Fall/Winter meal or when your looking for some quick comfort food this is a great soup to throw on the stove top. Full of whole ingredients with a perfect mix of flavors.

Start by chopping your veggies, season with onion powder, salt and pepper and add to your pot with a tbsp of olive oil. Let simmer with lid on top for 4-5 minutes or until veggies become soft and golden.

Add in your cooked Turkey and beans, mix well together. Then add you vegetable, turkey or chicken broth (I use chicken broth in this recipe).

I let this start to simmer and then add in the rice (Basmati). Optional: add more salt and pepper to taste. Optional to add red pepper flakes.

Ingredients

  • 1 tbsp Extra Virgin Olive Oil
  • 1 tsp onion powder
  • 1/2 tsp pepper & salt
  • 1 tbsp minced garlic
  • 1 cup chopped onion
  • 3 medium loose carrots
  • 2 celery stocks
  • 2 cups cooked turkey
  • 1 cup white beans
  • 1 box chicken stock
  • 1/2 cup water
  • 1 cup rice (basmati)

Instructions

  • Add olive oil chopped garlic, onion, carrots and celery to pot.
    Add onion powder, salt and pepper and mix before topping with lid. Let simmer for 4-5 minutes (stir periodically) or until veggies start to soften.
  • Rinse beans and add in along with cooked turkey. Mix ingredients together well before adding your turkey broth or chicken broth. Let soup start to simmer.
  • Add in rice and turn heat to low for about 5 minutes or until rice is cooked and soup is ready to serve.
  • Optional: Add more salt and pepper to taste.
