This recipe is my friend Rachelle’s amazing ricotta rollups. For all the pasta lovers and lazy lasagna fanatics definitely try this one out! It does not disappoint.
I’m a huge pasta lover so when my friend’s reached out for a girls night and decided that Rachelle would make her famous rollups I couldn’t say no. It’s the perfect pasta to cheese to sauce ratio and it absolutely keeps you full.
This was actually my first time making this recipe so I may have done it slightly different but it came out amazing and i’ll definitely be repeating it in the near future.
What you’ll need:
- Lasagna noodles
- Pasta Sauce
- Spinach
- Ricotta Cheese
- Parmesan or Mozzarella (OR BOTH)
- Parsley(optional)
First, boil water and cook the lasagna noodles. Tip: undercook the noodles so that they don’t get overcooked once you put them in the oven. They should be cooked just enough to be able to roll.
Then once they’ve cooled down, add the ricotta cheese evenly and a few pieces of spinach and start rolling. I add the noodles to a sheet pan with wax paper so they wouldn’t get stuck or difficult to roll.
In a baking dish, add a bottom layer of sauce before adding in your rolled lasagna noodles. Then add more sauce on top if you prefer. Once it’s full, place in the oven at 375 and bake for 15-20 minutes. Add cheese on top for another 5 minutes and broil to get the edges nice and crispy. This absolutely makes the dish!
Serve with a glass of wine for the ultimate combo!
