Cucumber Tomato Salad

Summer is sneaking up and all I’ve been craving is fresh and light healthier meals. This Cucumber Tomato Salad is a staple in our fridge and only takes minutes to throw together. It’s as simple as it sounds.

Fresh veggies and fruits are my favorite during those warmer months. I prefer to spend more time outside and less time slaving over complex recipe or hot stoves in the kitchen. Keep it easy with this simple recipe full of fresh ingredients.

What you’ll need:

  • Cucumber
  • Tomatos
  • Olive Oil
  • Lemon
  • Salt & Pepper
  • Basil

First, chop up the cucumbers and tomatoes as big or as small as you like. Toss in a bowl and add olive oil, lemon, salt, pepper and mix well. Add chopped fresh basil for some extra flavor.

It doesn’t get much easier than that. Simple and fresh cucumber tomato salad for whenever the craving hits.
