When I think of the word “Fresh”, cucumbers instantly come to mind. You can add it to water, muddle in a mojito, use to relax with them resting on your eyelids, and my personal favorite..to eat! Here’s to snacking on healthy.
BACK TO THE BASICS!
Cucumbers are so underated. Why not bring back a simple veg to munch on it instead of the bag of chips you constantly beat yourself up on after indulging. It’s always good in the moment but afterwards brings instant regret. At least in my case it does.
My go to plating scenario looks like this: a cucumber, a lemon, and a sprinkle of Celtic Sea Salt.
Yes, if you’re going to add salt please don’t use the table salt that is stripped of all its nutrients. Splurge on the good stuff. It will last a while and only benefits you with rich and balanced minerals. Celtic Sea Salt
SPEAR IT UP:
I peel the skin off the cucumber but that’s just my preference. Feel free to leave it on if you wish. I cut the cucumber in half and then in half again length wise, creating spears.
Follow it up with freshly squeezed lemon juice and a sprinkle of Celtic Sea salt. Simple as that.
I love to have this as a late morning snack or in between lunch and dinner. It’s refreshing and holds me over until the next meal. I also like to serve it as an app before dinner. Something to pick on while you wait.
Honestly, you can add any seasonings. Garlic salt, pepper, or even drizzle some salad dressing over it. It’s so simple and easy and just one less task on your plate that needs to be overcomplicated.
Just close your eyes when you pass the chip aisle and head straight to produce. These cucumber spears will help you to stick to your goals and stay guilt free.
