Yes, this is a strong craving of mine. I’m a sucker for fried rice but why not try to make it somewhat healthier? This is my Fried Cauliflower Rice recipe that definitely hits the spot.
I definitely go through these moods where I just need to fill up on Chinese. A lazy day with a good movie and an order of take out is just the vibe. Obviously, it’s not the best move so here I am trying to find a better version to share.
What you’ll need:
- Sesame Oil
- Riced Cauliflower (I just used frozen)
- Egg
- Veggies of your choice (frozen medley was used here)
- Scallions
- Liquid Aminos (works as a soy sauce alternative)
Best thing about this meal is you only need 1 pan! It doesn’t get much better than having an easy clean up.
Start with adding a drizzle of sesame oil to the pan before adding in your riced cauliflower. This will heat up pretty quickly on medium heat. Once it cooks I space out a small hole in the middle of the rice and add the egg right in the center. Scramble the egg slowly into the rice.
Once, the rice is just about cooked, add your veggies and let that simmer together and well into the mix. This is also where I add any seasoning. Salt, pepper, onion powder, etc.
Once everything is fully cooked together I pour in about a tablespoon of liquid aminos to give it that ultimate fried rice flavoring. This is a better alternative then the typical soy sauce! It’s gluten free and non-GMO.
Serve that baby in a bowl and top with green onion if you want as a garnish. Trust me this is so delicious you’ll want seconds and you won’t feel guilty about it. This fried cauliflower rice recipe is for sure a favorite in our house.
Happy Eating!
